  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small yellow onion, finely chopped
  • 1 tablespoon neutral oil (coconut oil or olive oil)
  • Zest of 1 lime
  • 2 tablespoons lime juice
  • 1/2 cup chicken stock or water
  • 1/2 teaspoon sea salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1/2 to 1 teaspoon red pepper flakes or 1 small jalapeño, minced (optional for heat)
  • Fresh cilantro, chopped, for garnish
  • Cooked rice, cauliflower rice, or zucchini noodles for serving

  • Instructions

  • Pat the chicken dry and season generously with salt and pepper. Heat the oil in a large skillet over medium-high heat. Sear the chicken until golden on both sides, about 3-4 minutes per side. Transfer to a plate and set aside.
  • Lower the heat to medium. Add the onion and cook 3-4 minutes until it turns translucent and sweet. Stir in the garlic and ginger and cook about 30 seconds until fragrant.
  • Pour in a splash of coconut milk and stock to deglaze the pan, scraping up the browned bits with a wooden spoon. These bits are flavor gold.
  • Return the chicken to the pan. Add the remaining coconut milk, lime zest, lime juice, and stock. Bring to a gentle simmer, then reduce heat to maintain a lively but not roaring simmer.
  • Simmer 8-12 minutes, turning once or twice, until the chicken reaches 165°F and the sauce thickens slightly to coat the back of a spoon.
  • If you want a silkier sauce, whisk together 1 teaspoon cornstarch with 2 tablespoons cold water and stir into the simmering sauce. Cook 1-2 minutes until glossy and thickened.
  • Taste and adjust salt or lime for desired brightness. Garnish with cilantro and serve hot over rice, cauliflower rice, or zucchini noodles.
