1.5 pounds boneless, skinless chicken thighs
1 can (13.5 oz) full-fat coconut milk
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 small yellow onion, finely chopped
1 tablespoon neutral oil (coconut oil or olive oil)
Zest of 1 lime
2 tablespoons lime juice
1/2 cup chicken stock or water
1/2 teaspoon sea salt (plus more to taste)
1/4 teaspoon black pepper
1/2 to 1 teaspoon red pepper flakes or 1 small jalapeño, minced (optional for heat)
Fresh cilantro, chopped, for garnish
Cooked rice, cauliflower rice, or zucchini noodles for serving
Instructions
Pat the chicken dry and season generously with salt and pepper. Heat the oil in a large skillet over medium-high heat. Sear the chicken until golden on both sides, about 3-4 minutes per side. Transfer to a plate and set aside.
Lower the heat to medium. Add the onion and cook 3-4 minutes until it turns translucent and sweet. Stir in the garlic and ginger and cook about 30 seconds until fragrant.
Pour in a splash of coconut milk and stock to deglaze the pan, scraping up the browned bits with a wooden spoon. These bits are flavor gold.
Return the chicken to the pan. Add the remaining coconut milk, lime zest, lime juice, and stock. Bring to a gentle simmer, then reduce heat to maintain a lively but not roaring simmer.
Simmer 8-12 minutes, turning once or twice, until the chicken reaches 165°F and the sauce thickens slightly to coat the back of a spoon.
If you want a silkier sauce, whisk together 1 teaspoon cornstarch with 2 tablespoons cold water and stir into the simmering sauce. Cook 1-2 minutes until glossy and thickened.
Taste and adjust salt or lime for desired brightness. Garnish with cilantro and serve hot over rice, cauliflower rice, or zucchini noodles.
