Ingredients

1 cup unsalted butter, cold and cubed

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 teaspoon salt

1 teaspoon vanilla extract

1 3/4 cups all-purpose flour

1/2 cup pistachios, chopped

2 cups fresh blackberries

2 tablespoons cornstarch

1/4 cup granulated sugar (for filling)

1 tablespoon lemon juice


Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

  • In a large bowl, combine cold butter, granulated sugar, brown sugar, and salt. Use a pastry cutter or fingers until mixture resembles coarse sand with pea-sized chunks.

  • Fold in flour and chopped pistachios. Reserve 1/2 cup for topping. Press remaining mixture into pan to form the base.

  • In a medium bowl, toss blackberries with cornstarch, sugar, and lemon juice. Spread over the crumble base.

  • Sprinkle the reserved crumble mixture over the berries.

  • Bake for 40–45 minutes until topping is golden and filling is bubbling. Tent with foil if topping browns too quickly.

  • Cool completely on a wire rack. Lift out with parchment and cut into squares.

 

  • Serve as-is or with whipped cream or ice cream.

Notes

Use fresh berries for best results; frozen works if thawed and drained.

Keep butter cold for a crumbly topping.

Bars can be stored at room temperature (2 days), in the fridge (4–5 days), or frozen (up to 2 months).

Substitute pistachios with almonds, pecans, or walnuts if desired.

Optional: sprinkle with powdered sugar or fresh mint for a prettier presentation.
