Ingredients
1 cup unsalted butter, cold and cubed
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1/2 teaspoon salt
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 cup pistachios, chopped
2 cups fresh blackberries
2 tablespoons cornstarch
1/4 cup granulated sugar (for filling)
1 tablespoon lemon juice
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a large bowl, combine cold butter, granulated sugar, brown sugar, and salt. Use a pastry cutter or fingers until mixture resembles coarse sand with pea-sized chunks.
Fold in flour and chopped pistachios. Reserve 1/2 cup for topping. Press remaining mixture into pan to form the base.
In a medium bowl, toss blackberries with cornstarch, sugar, and lemon juice. Spread over the crumble base.
Sprinkle the reserved crumble mixture over the berries.
Bake for 40–45 minutes until topping is golden and filling is bubbling. Tent with foil if topping browns too quickly.
Cool completely on a wire rack. Lift out with parchment and cut into squares.
Serve as-is or with whipped cream or ice cream.
Notes
Use fresh berries for best results; frozen works if thawed and drained.
Keep butter cold for a crumbly topping.
Bars can be stored at room temperature (2 days), in the fridge (4–5 days), or frozen (up to 2 months).
Substitute pistachios with almonds, pecans, or walnuts if desired.
